A simple recipe for Teriyaki sauce

Ingredients:
One fresh garlic clove
One fresh ginger root (enough to make 1/2 tsp.)
2 tbsp of Mirin
1/2 cup of soy sauce
1/2 cup of sugar
1/2 tsp of cornstarch (dissolve in Mirin)

Combine sugar, soy sauce, garlic and ginger in a non-reactive sauce pan and combine. For the garlic, use a fine tooth grater or use a garlic press. For the ginger root, peel and grate to make 1/2 tsp.

Combine Mirin and cornstarch. Pour this mixture into sauce and stir, while it is simmering.

Heat mixture to medium heat to get it simmering and stir each minute. Total simmer time is 5 minutes or until it has a nice syrup-type consistency.

This recipe beats anything I have gotten out of the bottle.
