This one is one of my Favourite ones
Marinated Beef Salad
1 Kg (2lb) beef fillet {thick end )
60 g (2oz)butter or substitute
2 Tablespoons Brandy
salt and pepper
Dressing
2 Tablespoons Vinegar
3 Tablespoons French Mustard
1/3 cup oil
1 Table spoon chopped parsley
3 shallots
Method
Remove any fat from fillet and tie at 1” intervals with string to hold meat firmly.
Heat butter until very hot in baking dish on top of stove.
Add fillet to pan, brown quickly on all sides until dark golden brown.
Remove dish f rom heat, add brandy, pepper &salt ,spoon over meat.
Bake in moderate oven 180c
20 min for rare
30-35 min for medium
45 min for well done
Baste well with pan juices frequently every 10 min
remove from oven, allow meat to become cold ,
Remove string from meat and slice thinly 1/8”.
Place slices in shallow dish.
Dressing
Combine vinegar , mustard, s&p, mix well, Gradually add in oil ,add parsley mix well
Spoon Dressing over meat and let stand for 30 min.
Arrange meat in serving dish , Spoon dressing over meat & sprinkle with chopped
shallots .
Serve with
Potato salad, Tomato and basil
