Dad's Potato Soup

Dad's Potato Soup
 
Stuff in Soup:
1 1/2 cubes of butter
1/4 cup flour
5 cups milk
one 14 1/2 oz can of chicken broth
4 large RED potatoes should become 4 cups precooked in chicken broth (red potatoes don't fall apart)
6 green onions (chopped)
1 lb bacon (fried crisp & crumbled)
1 1/4 cups shredded cheddar cheese (mild)
1/2 cup shredded carrots
1/2 cup chopped celery
1 tsp salt
1 tsp pepper

Mix it up!
Chop & shred celery & carrots, put into small pan of water and cook for 10 minutes. Melt butter in a 3 qt. pan. Whisk in flour until smooth, add milk gradually until thickened, add potatoes, onions, drained carrots and celery. Bring to just under boiling (Don't Boil recipe at all!), reduce heat and simmer. Add bacon and simmer for 10 minutes. Add mild cheddar cheese and stir until melted.

been trying to guess.

best guess I have is to cut of a piece from a stick of butter so it is as long as tall and wide.  Would form a cube.   but who knows

If you buy your butter in a one pound block, a cube would be about a  half a pound by the same logic.
