I found out what puts the fire in the Firecracker Steak and Shrimp. I think they're Thai chili peppers, ''mouse-dropping chili'' In Thai, owing to its shape. It's a chili pepper variety from the species Capsicum annuum that is native to Mexico, cultivated across Southeast Asia, and it is used extensively in many Asian cuisines. They're about 15 times hotter than the average jalapeno. The biggest piece on these 3 is about 1 5/8". My sinuses and taste buds are getting back to normal and my lips are still warm. The heat soaked all the way down through the chow mein, so even when I was done with the main part of the meal, it stayed hot. Here's a bit of hot pepper trivia. Pepper X is a cultivar of Capsicum chili pepper bred by the American chili breeder Ed Currie, the creator of the Carolina Reaper. In 2023, Guinness World Records recognized it as the world's hottest chili pepper. It measures 2.69 million SHU, beating the previous world record of 1.64 million SHU held by the Carolina Reaper. They're about 2.7 times hotter than ghost peppers, or 430 times hotter than the average jalapeno.

That means they're 400 times too hot for me to eat.
I tried something tonight I never did before. I put my ice cold bowl of food in the microwave and pressed the "Reheat" button. I never saw one of those before. There's a thermometer somewhere in the microwave that can tell when the food is hot, then it stops running. One segment of the outer rim of the numbers on the display, like the picture I made, was lit up at a time and chasing around and around. After awhile I heard a beep and when I looked the timer was counting down from 47 seconds. Maybe it was 50 when it beeped, but before that it was just one LED at a time lighting up going around the edge of the number display. My food was plenty hot, but not too hot. I like this feature of my new microwave. But every time I use any function I have to look where the stop, start, add 30 seconds, time cook, and all the other buttons are. The defrost function goes by weight or time. If you press the button once you can enter the weight of the food, and if you press it again you can enter the time you want.I usually don't know how much something that needs to be defrosted weighs, so I've only used time defrost so far.
